The Chemex is known for producing an exceptionally clean, smooth cup of coffee. Its thick paper filters and gentle pour-over process highlight clarity and balance, making it ideal for brewing multiple cups at once.
What Is a Chemex?
The Chemex is a glass pour-over brewer introduced in the 1940s. Its distinctive design and bonded paper filters remove more oils and sediment, resulting in a lighter, more refined cup.
What You’ll Need
- Chemex brewer
- Chemex paper filter
- 30g coffee (serves two)
- Burr grinder (recommended)
- 500ml fresh, filtered water
- Gooseneck kettle
- Scale
- Timer
- Stirrer or spoon
Brew Basics
- Grind: Medium
- Ratio: 1 : 16
- Water Temperature: ~200°F / 93°C
- Let boiling water rest for about one minute
- Total Brew Time: 3–4 minutes
Freshly ground coffee will always deliver better flavor and clarity.
How to Brew
- Prepare the Filter
Fold the Chemex filter and place it in the brewer, with the thicker folded side facing the spout. Rinse thoroughly with hot water, then discard the rinse water.
- Add Coffee
Grind 30g of coffee and add it to the filter. Gently shake or tap to level the coffee bed.
- Bloom (0:00–0:30)
Start your timer and pour about 60ml of water, saturating all the grounds. Allow the coffee to bloom for 30 seconds.
- Main Pour (0:30–2:30)
Slowly pour the remaining water in steady, circular motions, keeping the water level consistent and avoiding the filter edges.
- Finish & Serve
Allow the coffee to fully drain, finishing around the 3–4 minute mark. Remove the filter and serve directly from the Chemex.
Adjust to Taste
- Too light: Grind slightly finer or increase the dose
- Too heavy or bitter: Grind coarser or pour more gently
- Muted flavors: Use hotter water or fresher coffee
Final Note
The Chemex rewards patience and control. Focus on slow, even pours and let the coffee do the rest.
